Taproot uses Schnorr signatures and can keep unused script branches hidden when one branch is revealed to spend. A straightforward key-path spend can avoid revealing those alternative conditions at all. That can improve how complex arrangements appear onchain, but it doesn't make every Bitcoin payment anonymous or hide every transaction detail.
How you might use it
A treasury has several Taproot spending paths. It uses the key path, so its alternative script conditions aren't revealed in that spend.
